This salad recipe is wonderful served with grilled steak or chicken. It’s also fantastic to take to a summer potluck.
Makes 8-10 Servings
2 T. sugar
3 T. white vinegar
1/2 c. minced red onion
2 t. poppy seeds
1/2 c. mayonnaise (Hellmann’s brand preferred)
1/2 c. plain yogurtRomaine lettuce
2 pt. strawberries, rinsed, drained, hulled and sliced
Whisk sugar and vinegar in large bowl until sugar is dissolved. Stir in onion, poppy seeds, mayonnaise and yogurt until well combined. (This can be made ahead and refrigerated.)
Wash, drain and chop or tear Romaine lettuce into a large salad bowl. Put about 3/4 of the strawberries in the lettuce and toss without the dressing. (This can be tossed, covered and stored in the refrigerator a couple hours ahead of serving.)
When you are ready to serve, toss lettuce and strawberries with the salad dressing. Add remaining strawberries to the top of the salad.
